Preheat oven to 375°F. Line two baking sheets with parchment paper or nonstick baking mats.
In a stand mixer (or in a large bowl using an electric mixer), cream together butter and Splenda Stevia Sweetener until light and fluffy. Add egg and mix until well combined, then mix in vanilla extract.
Mix in flour, baking powder, salt, and nutmeg.
Scoop tablespoons of dough and shape into balls. Place on prepared baking sheets about 2” apart. Lightly flatten each cookie with the bottom of a glass.
Bake for 8–10 minutes or until lightly golden. Cool slightly, then transfer to a wire rack to cool completely.
