In a saucepan, combine milk, Splenda Stevia Sweetener, vanilla extract, and cinnamon stick. Bring to a boil.
Add rice and salt. Cover and cook over low heat, stirring occasionally, for 30 minutes or until most of the milk is absorbed. Remove from heat.
In a microwave-safe bowl, combine raisins (or mixed dried fruit) and rum (or orange juice). Warm in a microwave briefly to plump the dried fruit. Add to rice pudding.
Spoon into dessert dishes. Sprinkle with nutmeg. Serve warm or chilled.
