Stir together all three ingredients in a small saucepan. Bring to a boil over high heat.
When the first bubbles appear, reduce heat to medium and simmer 5 minutes. Turn off heat and gently smash mango chunks against the saucepan with the back of a fork. Remove from heat, and let mixture cool for 30 minutes. Strain mixture into a glass jar or air-tight container to remove mango pulp.
Store in the refrigerator. Warm in microwave before using to melt any ice crystals that may have developed after refrigeration. Keeps up to 2 weeks when kept in the refrigerator. To use for a delicious mango iced tea, stir 2-3 tablespoons into tea, then add ice for a delicious, refreshing drink!

Use leftover mango pulp in a smoothie, or stirred into plain yogurt with stevia sweetener for a delicious breakfast or snack
Use 1-2 tablespoons or to taste in sparkling water, party drinks, or on dessert concoctions
