Preheat the oven to 350° F. Spray a 9×5 bread pan with nonstick cooking spray.
In a bowl, combine flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt. Mix well with a whisk and set aside.
In a separate bowl, whisk together eggs, Splenda Magic Baker Brown Sweetener, vanilla, pumpkin, and oil for 1 – 2 minutes, until completely combined.
Add flour mixture to the wet ingredients. Whisk together until batter is blended and smooth, using a rubber spatula to scrape down the sides of the bowl as you go. Pour batter into the bread pan. Cover the top with foil, making a dome on top to give bread room to rise.
Bake for about 40 minutes covered, then remove the foil, and bake 25-30 more minutes, or until a toothpick inserted comes out clean. Watch bread and if it starts to get overly-browned, place foil back on top and finish baking.
While bread is cooling, make frosting. To make a powdered sweetener, place Splenda Magic Baker Sweetener and cornstarch in a small high-powered blender or food processor. Process on high for 20-30 seconds.
Pour powdered sweetener into a bowl, and beat with softened butter, cream cheese, and vanilla.
When bread is completely cooled, cover with frosting. Slice and enjoy!
